Prawns Curry / Zingyachi aamti/Sungatacha aambat (as said in konkani)


Ingredients :

  • Prawns                : 1/2 kg
 

Step a: Clean the prawns, marinate with salt and turmeric powder.

  • Red Dry Chillies   : 8-10
  • Corriander           : 1 1/2 Tsp
  • Pepper                 : 8 -10
  • Cummin Seeds     : Pinch
  • Haldi                    : 1/2 Tsp
  • Grated Coconut    : 1/2 cup
  • Vatamb  Sol          :  4                (Optional wuld be Tamrind)
  • Onions                 :  3 chopped.
  • Green chillies        :  3-4
  • Ginger                  :  1 inch chopped.

Step1:  Fry Red Dry chilles,Corriander, Pepper in coconut oil. Remove down fom heat and add haldi and cummin seeds.


Step 2 : Grind the above roasted ingredients, coconut, Vatamb Sol.

OR Grind 2 tbsp of Saraswat sambar masala with coconut and vatamb (** Please find the recipe of sambar masala @ ( http://vismayblog.blogspot.in/2013/01/saraswat-sambar-masala.html)


Step 3: In a pan, put 2 tbsp of oil. Fry onions,green chillies, ginger chopped,add prawns fry for around 5 min.


Step4 : Add the grounded paste. One cup water, add salt as per taste. Bring it boil for 10 min.


    Goes good with white rice

Chicken curry


All we require is


Chicken                : 1 kg
Turmeric powder  : 1 Tsp.
Curd                     : 200 gms
Salt  as per taste.

Onion     :  3 big.
Tamato   :  3 small.

For Green Masala :

Corriander     : 1 bunch (Medium)
Garlic            : 4 big
Ginger           : 2 1/2 inch  (**Note : Garlic and Ginger should be taken in equal amount)
Green chillie  : 3-4

Grind the above ingredient into smooth paste.
Mariante Chicken with curd,salt,turmeric powder and above green masala for 1/2 hour or more.


 For Dry Masala 

Corriander        Seed     : 4      Tsp      कोतोम्बर 
Anise                Seed     :11/2 Tsp      बडीसोप
Cummin            Seed     :1/2   Tsp      जीर  
Black Cummin  Seed     :1/4   Tsp      शाही जीर
Pepper                          :16               मिरी             
Cloves                           :16               लवंग
Cardmom                      : 4               वेलची
Poppy Seeds                 :1 1/2 Tsp     कसकस   

Step 1 :  Ground the above masala .

Step 2:   Take around 2Tbsp of oil or vanaspati in a pan. Added chopped onions, let it fry till brown.
Step 3:   Add chopped tamatoes, fry it well for around 5 min on medium flame.



Step 4:   Put dry masala and  2Tbsp redchillie powder. fry for a min or two.


Step 5:  Add marinated chicken. Cook till chicken become soft. ( If using pressure cooker take 3 whistle, chicken becomes soft).
